Ingredients:
- 1 piece of white tofu, diced
- 1 egg yolk
- 200 gr tapioca flour
- 2 scallions, thinly sliced
- 150 grams of flour
- broth to taste
- enough water
Ground spices:
- 2 cloves of garlic
- 4 cloves of shallot
- salt and sugar to taste
- 1/2 tsp ground pepper
Peanut sauce:
- 2 cloves garlic, fried
- 1 handful of peanuts, fried
- salt to taste
- 3 red chilies, fried
- enough water
- 1 tablespoon brown sugar
How to make:
- Soak the tofu in salt water, approximately 5 minutes, don't be too salty.
- Gently crush the spices. Mix with tapioca flour, wheat flour, egg yolks and leeks. add water little by little, knead until the mixture becomes thick and sticky. Don't be too runny.
- Tofu dip, stir with a spoon with the dough and fry until cooked.
- Blend the peanut sauce, heat it in a frying pan, add sugar and salt to taste, taste test, and be ready to serve with tofu batagor. If you like, you can add soy sauce and chili sauce.
